Thinking about European cuisines often conjures a variety of images of rich pastries, large portions of heartily seasoned meats, dishes made with eggs and cheeses, fresh produce and—of course—beer and wine. We’ve cast a wide net, including recipes that are widely popular and a few that are less well-known but highly worthy of finding their way into your culinary experience. From France we have chocolate mousse, filet mignon and quiche. From Greece, stuffed dolmades, lamb gyros and tzatziki sauce. Germany brings us bratwurst with sauerkraut, chocolate covered gingerbread (lebkuchen) cookies and zwiebelkuchen, and from Spain, Gallician octopus, tomato based romesco sauce and fresh seafood paella.
